Being authentic goes beyond knowing yourself, is actually being yourself. Being authentic is when your actions are aligned with your beliefs and desires regardless of the circumstances that surrounds you and the external pressures of the world. Fitness Instructor and Holistic Health Coach, Vimarie Gonzalez, explains to us the importance of being authentic as individuals, and how we can begin the process of manifesting our true greatness. Is ready in less than 30 minutes, serves 4 portions and is only 350 cal. INGREDIENTS: 1/4 C. butter (or 2 Tbsp. Olive oil) 1/4 onion, finely chopped 1 Garlic clove, minced 1 Cauliflower head, grated (or 3 C fresh cauliflower rice) 1 C. Zucchini, small chopped 1/2 C. Heavy cream 1 C. Parmesan cheese, grated 1/2 tsp. Pink salt 1/4 tsp. Black pepper, ground 1/4 tsp. Nutmeg, grated STEPS: 1. Heat up oil (or melt butter) in a skillet over medium heat. 2. Add Onion and cook until tender. Add Garlic and cook until fragrant. 3. Stir in Cauliflower rice and cook for 3 minutes. Add Zucchini and cook for another 3 minutes. 4. Stir in heavy cream, cheese, pink salt, black pepper and nutmeg. Cook for 5 minutes or until creamy consistency. 5. Serve warm and enjoy! NOTES: 1. This is a keto friendly version, which means high fat and low carbs. Check out the options below. 2. You can replace the heavy cream by combining 1 tablespoon of corn starch with 1/2 cup of cold water. 3. You can replace the Zucchini with the veggies of your choice such as mushrooms, eggplant or red bell peppers 4.
